Apricot bars

So, as many of you know, I am fibre mad at the moment, and so I made these little bars which are just brim full of flavour, fibre, and all good things. Now I could coat these in chocolate, or roll them in sugar or coconut, or do any manner of things to them, but I am not going to because they are gorgeous, and healthy, and, at the moment THESE ARE NOT A DISCRETIONARY ITEM! And I want to keep them that way. At the moment these fall quite neatly into the fruit and healthy fats category. They are nut-free, added sugar free, high in fibre and iron and just delicious.

I will at some point pop these into Foodworks for you so we can see just how much fibre bang we are getting for our buck, but the lovely Amy, who follows my Instagram account, is interested in making these for her son, so I am putting this in as a work in progress.

Let's get started.


Oooh! Pretty little things, aren't they?


Ingredients


200g dried Turkish apricots

50g pitted dates

100g sunflower seeds

40g coconut flour

10g psyllium husk

2 tsp water (if necessary)


Place all ingredients into the base of a food processor, except for the water, process until it is quite sandy and sticky, now, we want it to form clumps when squeezed together, mine was pretty sticky, but I wanted it to clump a little more so I added one, then another teaspoon of water until the mix began to come together, bear in mind here that the more water we add, the more perishable these will be and the softer they will be, as I said, work in progress, next time I will make them without the water and see what the difference is.

Press into the bottom of a lined casserole dish or baking tray. Allow to sit for at least two hours, cut into bars. Store in an airtight container, I have put mine in the fridge because I think they will keep better in there.

As I said, you could dip or drizzle these with chocolate, roll them in sugar if you want to. I didn't because I am looking for a healthy and delicious snack that doesn't fall into the discretionary food category, and as soon as you add things like this, you are pushing it into the treats section, but that is up to you. As is, they are delicately delicious, and I am very pleased with them.
