And so I have covid, and it is a nasty thing, my doctor tells me to eat good food and stay hydrated and to rest, so that is what I am doing and I made this soup because eating good food is harder for those of us with food issues than it is for others when we are sick as many of us simply can't purchase something off the shelf that will not make us feel worse. So here we go, about the simplest soup ever, but very delicious and nourishing and simple to digest for the convalescing body.
Yes, yes, I know, it looks a bit like a bowl of vomit, but there is so much in here that is good for you, and it is delicious I promise, close your eyes and think of Australia.
Ingredients
2 beef sausages
1 tablespoon olive oil
1 stick celery, sliced
1 carrot, quartered lengthwise, finely sliced
1/2 onion, diced finely
4 garlic cloves, chopped
1 x 440g can of four bean mix, drained and rinsed
1 cup frozen mixed veg, I used corn, peas and carrots
1 stock cube
1 cup leftover mashed potato (or you can just put in two chopped potatoes if you dont have any leftover mash.
Pop a medium sized pot onto your stovetop and heat the olive oil to medium heat, squeeze out the sausages into little meatballs and drop into hot olive oil, brown all over, add the onion, celery and carrot, cook for two minutes or until fragrant and onion is translucent, add the garlic, cook one minute, add everything else plus plenty of water to cover, bring to the boil, turn the heat down and cook for about half an hour, until everything is tender. Season and serve.
That's it, just the simplest, yummiest soup that looks after itself.
