I had my Mum stay with me recently during a visit from interstate and she just loves pancakes, so I whipped these easy-peasy pancakes up for her and then I thought, oh, I don't think this is a recipe that I have shared yet.
Pancakes can be a bit daunting for people, and I think that is because they have a little bit of a reputation for being difficult, which they absolutely don't need to be. I have worked with a lot of pancake recipes in my long career as a chef, some are complicated, some are not, this one is pretty simple and user-friendly, while maintaining that light and delicious factor, so let's get started.

Ingredients - makes four hearty pancakes
85g plain flour
9g baking powder
1 egg
110g milk
Olive oil
Butter
Combine the flour and baking powder in a large bowl, whisk together well to aerate everything and make sure the baking powder is well distributed. Make a well in the centre of the flour, add the egg and milk, whisk it all together until it is free of lumps, set aside for five minutes for the gluten to relax so that the pancakes are not tough.
Heat a frying pan to a moderate temperature, it is very important that it is hot before the pancake batter hits the pan, this will help stop it sticking. Pop a little olive oil into the hot pan and a small knob of butter, it should melt and sizzle, but not burn, a little browning is okay, but we don't want smoking black butter, this is a good way to tell if your pan is hot enough/too hot.
Tip a quarter of your pancake batter into the centre of your frying pan, cook until bubbles begin to form on the surface and the bottom is golden.
Yes, that is good, see how the edges are set? And how the butter has coloured but not blackened? Good, now, slide an egg slide under it and flip it over.
Lovely, let it cook until it is golden on the other side, slide it onto a plate, add a little more olive oil and butter to the pan and cook your next one.
Perfect. Now you just have to decide what to top them with!
