Do you drink mocktails? I am not a big drinker of alcohol, one every now and then is my mantra, so mocktails can be a good answer for this during social settings. Recently Mr T and I hosted a gathering of possible future in-laws and the progeny they had produced that have captivated our tadpoles, and this is one of the two mocktails I served.
Ingredients
1/4 cup elderflower cordial
1 1/2 cups pineapple juice
375ml of cider or sparkling apple juice
100ml soda water
ice
So first you need ice, lots of ice, this is a 1.2 litre jug, I filled it 2/3 full of ice, then add all of the other ingredients, stir with a fancy long stirrer (take away chop stick), allow to sit for a minute to chill and then serve.
This was a huge hit at our party, though I think that the Strawberry Mockery was more popular. Mmmmm, Strawberry Mockery, I want one of those now.
Serves 4-6 (depending on size of glasses).
