I do love a winter pud, and this one is just a delight. It is another of my rice cooker recipes, especially for my Mum, hi Mum! But we are so very happy to share with you all. This one is grain free, which my Mum is not, but as many of you know, I am, so I have fitted it with a substitute for those of you who can eat wheaten flour.
Doesn't that look good? And very delicious it was too.
Ingredients - Serves 6
2 tins of apple slices pie fruit (or 6 apples, peeled, cored and sliced roughly)
100g softened butter
100g caster sugar
2 eggs
40g green banana flour
30g coconut flour
30g tapioca starch
12g baking powder
OR
120g self-raising flour
Milk (I used almond milk, but you can use whatever you have in your coffee)
Pop the tins of apple or apple slices into the bowl of a rice cooker (or into a greased casserole dish if you are doing this in the oven), cream the butter and sugar, beat in the eggs, combine the flours and stir those in, add just enough milk to make a soft batter, spoon this over the apples, smooth the top so all the apples are covered, close the lid of the rice cooker, select the 'cake' cycle if you have one, or just press 'start' if you have a more basic rice cooker, cook until a skewer inserted comes out clean (or bake in at 160 degrees C in an oven if you are doing it this way, again, until cooked through), serve with custard, ice-cream or cream.
